Eine herrlich leichte und einfach zu bereitende Mahlzeit, die nicht nur im Sommer schmeckt.
Zutaten für 4 Personen:
- 8 Kalbsrouladen (à ca. 80 -100 g)
- Salz & Pfeffer
- 1 Bund Petersilie
- 250 g Mozzarella Käse
- 2 EL Pinienkerne
- 4-5 EL Öl
- 200 g Bandnudeln
- 1 kleine Zwiebel
- 1 Knoblauchzehe
- 500 g gewürfelte Tomaten
- 1 EL Tomatenmark
- 125 ml Gemüsebrühe
- Holzspießchen
Zubreitung:
- Fleisch waschen und trocken tupfen, etwas plätten / klopfen
- Mit Salz und Pfeffer würzen.
- Die Petersilie waschen und bis auf ein wenig Deko von den Stielen zupfen und fein hacken.
- Mozzarella trocken tupfen, 30g beiseite nehmen, den Rest fein raspeln.
- Die Pinienkerne fein hacken (wer es etwas deftiger mag, vorher kurz anrösten)
- Nun Petersilie, geraspelten Mozzarella und die Pinienkerne vermischen und auf den Rouladen verteilen.
- Aufrollen und mit den Holzspießchen fixieren.
- 3-4 EL Öl in einer Pfanne erhitzen, die Rouladen darin rundherum anbraten und bei mittlerer Hitze weitere 10 Minuten garen, dabei ab und an wenden.
- Nudel in kochendem Salzwasser al dente kochen (bissfest).
- Tomatenwürfel, Tomatenmark und die Brühezusammengeben, kurz aufkochen und ca 5 Minuten bei mittlerer Hitze einkochen lassen. Mit Salz und Pfeffer abschmecken.
- Verbliebenen Käse in Würfel schneiden.
- Die Nudeln abgießen.
- Die Rouladen mit den Nudeln und der Soße in einer Schüssel anrichten, mit Mozzarellawürfel bestreuen und die restliche Petersilie als Garnitur beigeben.

- Fett ca 30 g
- Kohlenhydrate ca 42 g
Variante:
- Die Rouladen lassen sich auch gut auf einem Grill zubereiten.
- Statt der Nudeln kann man auch grönen Spargel dazu reichen, der ebenfalls auch auf dem Grill zubereitet werden kann.
